Method

1.Grease a 19cm x 29cm lamington pan, line base and sides with paper; grease paper well.
2.Combine sultanas, coffee and water in a saucepan and bring to the boil. Remove from heat, then cool to room temperature.
3.Cream butter, essence and sugar in a small bowl with electric mixer until light and fluffy. Beat in egg until combined. Transfer mixture to large bowl.
4.Stir in half the sifted flour, cinnamon and soda with half the sultana mixture, then stir in remaining flour and sultana mixtures. Stir in apple.
5.Spread mixture into prepared pan. Bake in moderate oven for about 25 minutes.
6.To make caramel icing, combine sugar, butter and milk in saucepan. Stir constantly over heat without boiling until smooth. Gradually stir in sifted icing sugar.
7.Spread with icing and sprinkle with walnuts. Cool mixture in pan before cutting.
