Blackberry soufflés

Wow your dinner guests with these vibrant and delicious blackberry soufflés.

1.Preheat oven to 190°C.
2.Combine blackberries and the water in small saucepan; bring to a boil. Reduce heat; simmer, uncovered, until blackberries soften. Add caster sugar, stir over medium heat, without boiling, until sugar dissolves; bring to a boil. Reduce heat; simmer, uncovered, 5 minutes.
3.Remove from heat; using the back of a large spoon, push blackberry mixture through sieve into small bowl, discarding seeds in sieve. Refrigerate 15 minutes.
4.Beat egg whites in medium bowl with electric mixer until soft peaks form. Gently fold in blackberry mixture until combined.
5.Divide mixture among four lightly greased 1-cup (250ml) ovenproof dishes; place on oven tray. Bake, uncovered, about 12 minutes or until soufflés are puffed and browned lightly.
6.Dust with sifted icing sugar; serve immediately.
