1.Preheat oven to 200°C (180°C fan-forced). Grease four oven trays. Line trays with baking paper.
2.Combine butter, sugar, honey, flour and cream in small saucepan; bring to the boil, stirring. Reduce heat; cook, without stirring, 2 minutes. Remove from heat; stir in nuts.
3.Drop level teaspoons of mixture about 8cm apart onto trays. Bake about 6 minutes or until golden brown.
4.Remove from oven; using metal spatula, push florentines into rounds. Cool on trays 1 minute then carefully lift florentines onto baking-paper-lined wire rack to cool. Drizzle florentines with chocolate; refrigerate until set.
