Ingredients

Smoked salmon and caper cream sandwiches
  • 200 gram cream cheese, softened
  • 1 teaspoon capers, chopped
  • 1 tablespoon parsley, chopped
  • 2 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 12 slice fresh bread
  • 1/2 cucumber, sliced thinly
  • 150 gram sliced smoked salmon

Method

    Mash cheese, capers, parsley, juice and zest. Season well.

    Spread four bread slices with cheese mixture and top with cucumber. Spread another four slices with cheese and place, cheese side down, on top. Spread top of this bread with cheese, followed by salmon.

    Spread last four bread slices with cheese and place, cheese side down, on top. Carefully cut off crusts, then cut into triangles.
