Method

Refrigerator sliceand-bake cookies

1.Beat butter and sifted icing sugar in small bowl with electric mixer until light and fluffy. Transfer to large bowl; stir in sifted flour, in two batches.
2.Knead dough lightly on floured surface until smooth. Divide dough in half; roll each half into a 25cm log. Wrap dough in plastic wrap; refrigerate about 1 hour or until firm.
3.Preheat oven to 180°C/350°F. Grease oven trays; line with baking paper.
4.Cut logs into 1cm slices; place 2.5cm apart on trays. Bake about 10 minutes. Cool on trays.

These cookies can be topped with nuts before baking or, once cooked, iced then dipped into various sprinkles, or simply dusted lightly with sifted icing sugar. To flavour the dough, beat your choice of essence or extract with the butter and sugar mixture, or beat in a teaspoon or two of finely grated citrus rind.
