Porridge with fruit compote

There can be few things as comforting or nutritious as a warming bowl of porridge. Here, we've teamed up the humble oat with this delicious fruit compote to give you a breakfast that will set you up for the day.

Ingredients

Porridge with fruit compote
  • 1 medium_piece apple (150g)
  • 1/4 teaspoon ground cinnamon
  • 2 tablespoon water
  • 4 dried apricots, halved
  • 2 teaspoon sultanas
  • 1/2 cup (45g) rolled oats
  • 1/2 cup (125ml) skim milk
  • 3/4 cup (180ml) boiling water
  • 2 teaspoon brown sugar

Method

    Peel, core and slice apple thickly. Place apple, cinnamon and the water in medium saucepan; bring to the boil. Reduce heat, simmer, uncovered, minutes.

    Add apricots and sultanas to pan; simmer, covered, about 5 minutes or until apple is tender

    Meanwhile, combine oats, milk and the boiling water in another medium saucepan; bring to the boil. Reduce heat, simmer, uncovered, stirring occasionally, about 5 minutes or until mixture thickens.

    Serve porridge with compote; sprinkle with brown sugar.

Notes

Any dried fruit, such as prunes, peaches or pears, could be used instead of the apricots.
