Gluten-free christmas pudding
- 1/2 cup (125ml) milk or skim milk
- 1 teaspoon bicarbonate of soda
- 1 large over-ripe banana
- 2 cup (140g) stale gluten-free breadcrumbs (not dry)
- 2 cup (380g) mixed dried fruit
- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground cinnamon
Method

- 1Lightly grease a 5-cup (1.25 litre) capacity pudding basin.
- 2Combine the milk and soda in a jug. Mash the banana.
- 3Combine the gluten-free breadcrumbs, fruit, spices, milk mixture and banana in a large bowl; mix well.
- 4Spoon the mixture into the prepared pudding basin. Cover the top with pleated baking paper and foil; secure with some string or a lid.
- 5Place the basin in a large saucepan with enough boiling water to come halfway up the side of the basin. Boil, covered, for 2 hours. Replenish with boiling water as necessary during cooking to maintain the water level.
- 6Turn the pudding out.

This recipe can be made a week ahead; keep refrigerated.
