Air fryer passionfruit buttermilk cake

Preheat a 7-litre air fryer to 160°C/325°F for 5 minutes. Grease a deep 20cm (8in) round springform cake pan; line base and side with baking paper. Ensure the pan will fit into the air fryer basket.

Beat butter, caster sugar and vanilla in a bowl with an electric mixer until thick and creamy. Beat in eggs, one at a time, until combined. Fold in flour, buttermilk and ¼ cup of the passionfruit pulp. Spoon mixture into pan; cover with foil.

Taking care, place pan in the air fryer basket; at 160°C/325°F, cook for 30 minutes. Remove foil; cook for a further 30 minutes or until a skewer inserted into the centre of the cake comes out clean.Remove pan from the air fryer.
Leave cake in pan for 10 minutes before turning out onto a wire rack to cool.

To make passionfruit icing, combine icing sugar and remaining passionfruit pulp in a small bowl. Spread top of cooled cake with passionfruit icing.
