Spinach with roasted sesame seed dressing



1.Reserve 1 teaspoon of the seeds, blend, process or grind remaining seeds until smooth.
2.Place ground seeds with dashi, sauce and sugar in screw-top jar, shake until sugar dissolves.
3.Cook spinach in medium saucepan of boiling water for 30 seconds, drain immediately. Rinse under cold running water. Wrap spinach in bamboo mat, roll firmly and gently squeeze out excess water, place on serving plate.
4.Just before serving, pour dressing over spinach. Serve at room temperature, sprinkled with reserved seeds.

You could use tahini (sesame seed paste) instead of grinding the toasted sesame seeds. Beans or watercress can be used instead of spinach in this salad, and peanuts or macadamia nuts could be substituted for the sesame seeds. If you like, you can sprinkle the cooked spinach with smoked dried bonito flakes.
