You can make the aïoli early on the day you intend to serve it and refrigerate, covered. Similarly, if you shell and devein the prawns and store them in a small glass bowl, covered, in the refrigerator early on the day, then it’s just a simple matter of tossing them with the rocket and dolloping on the aioli at mealtime.
