Grilled tofu with sesame and spinach miso

1.Press tofu between two chopping boards with weight on top, raise one end; stand 25 minutes.
2.Stir miso, sugar, mirin and dashi in small saucepan over heat, without boiling, until sugar dissolves. Stir in tahini.
3.Boil, steam or microwave spinach until just wilted. Squeeze out excess liquid. Blend or process spinach with half the miso mixture.
4.Preheat grill.
5.Cut tofu in half crossways through the block, then into 3cm (1¼-inch) slices; pat dry with absorbent paper. Place slices on oiled oven tray; grill about 3 minutes or until browned lightly. Spread half the tofu pieces with miso mixture, then spread remaining tofu with spinach miso mixture. Place under grill a further 2 minutes or until miso is browned lightly. Serve sprinkled with rind

Use a lemon zester to make lemon rind strips for decoration; soak them in iced water to make them curl.
