This quick chicken BLT salad recipe for one is easy to make and packed full of flavour. The chicken is coated in smoked paprika before pan frying, then served with a tangy mustard and garlic yoghurt dressing. And this wouldn’t be a BLT salad recipe with some crispy bacon, fresh lettuce and juicy cherry tomatoes.

Cook bacon in a medium frying pan, over medium heat, for 3 minutes or until crisp; drain on paper towel, then tear into large pieces.

Combine paprika, oil and chicken in a small bowl. Season.

Add chicken to same pan; cook for 2 minutes each side or until cooked through. Cool slightly, then shred chicken coarsely.

Stir mustard, juice, water, yoghurt and garlic in a small bowl.

5.

Layer lettuce, shallot, tomato, chicken and bacon in a shallow bowl; drizzle with yoghurt dressing, sprinkle with parsley.

Can I prepare the chicken BLT salad in advance?

The yoghurt dressing for the chicken salad recipe can be prepared several hours ahead; store, covered, in the fridge. Assemble the chicken salad just before eating.

Chicken salad ingredient swaps

You can use basil instead of parsley leaves, if you like.

Shallots are a small, milder-tasting member of the onion family. The size makes them perfect for solo dinners, plus they will store for months if kept in a basket at room temperature. However, you could also use a green onion.
