Method

1.Using sharp knife, mandoline or V-slicer, cut potatoes into 2mm slices.
2.Top half of the potato slices with parsley leaves; top with remaining potato slices, press firmly to seal wafers.
3.Heat oil in large saucepan; deep-fry wafers, in batches, until browned lightly and crisp. Drain on absorbent paper.

Try layering various herb leaves, such as sage, inside the potato wafers. You can also use russet burbank or spunta potatoes for this recipe.
