Rolled barley breakfast fruit trifle

LSA is a mixture of ground linseeds, sunflower seed kernels and almonds; available in health-food shops or the health-food section in supermarkets.

Ingredients

Method

1.Halve, stone and slice apricots thinly. Quarter strawberries; combine with apricots in small bowl.
2.Divide half the fruit between four 1½-cup (375ml) glasses. Top with half the yogurt. Spoon over barley, LSA, honey and remaining yogurt.
3.Cover glasses and remaining fruit separately; place in refrigerator overnight.
4.Top trifles with remaining fruit to serve.
