Crispy duck and fig salad with spiced balsamic glaze

Fig and balsamic are a fabulous flavour combination, the fruits fresh sweetness is crisply cut by the mellow acidity of the aged vinegar.

Method

1.To make spiced balsamic glaze, combine vinegar, sugar, cinnamon and cloves in a small saucepan. Stir over low heat, without boiling, until sugar dissolves. Bring to the boil and simmer, uncovered, about 5 minutes or until syrup thickens slightly. If glaze becomes too thick, stir in a little boiling water. Cool.
2.Meanwhile, cook duck, skin-side down, in a large heated and oiled frying pan about 5 minutes or until skin is crisp. Turn duck; cook another 5 minutes or until cooked as desired. Cover, stand 5 minutes then slice duck thinly.
3.Place watercress and tomato in medium bowl with dressing; toss gently. Divide figs among plates; top with tomato mixture then duck.
