Method

1.Heat oil in wok. Stir-fry ginger, garlic and chilli until fragrant. Add capsicums, corn and water; stir-fry until vegetables are almost tender. Add stock, sauce, tamarind and sugar. Stir-fry for 2 minutes.
2.Add bok choy to wok and stir-fry until wilted. Remove from heat, then stir in mint.
