Sake duck with snow peas and avocado


Sake syrup


1.Boil, steam or microwave peas and capsicum until just tender; drain. Rinse under cold water, pat dry with absorbent paper.
2.Heat oil in medium frying pan; cook duck, skin-side down, until skin is browned and crisp. Turn duck, cook 5 minutes or until duck is tender. Remove duck from pan; stand 10 minutes, slice thinly.
3.Meanwhile, combine sake, sauce, sugar and vinegar in clean pan; simmer, uncovered, 2 minutes or until sauce is thick and syrupy
4.Remove syrup from heat; add duck, turn to coat. Serve duck with snow peas, capsicum and avocado.
