1.Preheat oven to 200ºC (180ºC fan-forced).
2.Combine tamarind, juice, oil and sugar in small saucepan; reserve 2 tablespoons of the mixture in large bowl. Bring remaining mixture in pan to a boil. Reduce heat and simmer uncovered for about 2 minutes or until mixture thickens slightly.
3.Place lamb on metal rack inside large shallow baking dish. Brush hot tamarind glaze over racks. Roast uncovered for about 20 minutes or until racks are cooked as desired. Cover racks and stand 10 minutes.
4.Meanwhile, segment oranges over reserved tamarind mixture in bowl. Add tat soi and mushrooms; toss gently.
5.Cut each lamb rack in half. Place two halves on each serving plate and serve with salad.
