Method

1.Combine mince, breadcrumbs, egg and cheese in medium bowl; roll level tablespoons of mixture into balls
2.Heat oil in medium frying pan; cook meatballs, uncovered, until browned.
3.Blend or process onion, garlic, chilli, anchovy, tomatoes and paste until smooth.
4.Combine tomato mixture with stock in medium saucepan; bring to the boil. Add meatballs and olives to tomato mixture; simmer, uncovered, 15 minutes.
5.Meanwhile, cook spaghetti in large saucepan of boiling water until tender; drain.
6.Serve spaghetti topped with meatballs and sauce; sprinkle with parsley.

Some butchers sell a pork and veal mince mixture; you could buy 500g of this, if it’s available.
