Method

1.Place noodles in a large bowl, cover with boiling water, stand 5 minutes, stirring occasionally to separate noodle strands.
2.Drain and set aside. Add carrots, celery, tofu and capsicum to greased, heated wok or large frypan, stir-fry until vegetables are just tender.
3.Stir in marinade and ¼ cup water, bring to the boil then reduce heat, add noodles, stirring over heat until ingredients are combined and heated through. Garnish with finely chopped fresh coriander.
