Method

1.Sprinkle pork with pepper and oregano. Heat oil in large frying pan, cook pork, until tender, turning once. Remove from pan.
2.Add blended cornflour and stock to pan, stir until mixture boils and thickens. Add vinegar, return pork to pan. Turn to coat in sauce.
3.Baked capsicum salad. Quarter capsicums, remove seeds and membranes. Place capsicum on oiled oven tray with tomato, mushrooms and garlic, sprinkle with oregano and oil. Bake, uncovered, in moderately hot oven 40 minutes. Add olives, sprinkle cheese over tomato. Bake further 15 minutes or until capsicum is tender.
4.Serve with baked capsicum salad. Sprinkle with fresh oregano, if desired.
