Spiced orange dressing


1.Combine pork, sugar, mustard and rind in medium bowl.
2.Heat oil in medium frying pan; cook pork until cooked as desired. Cover pork; stand 5 minutes then slice thinly.
3.Melt butter in same frying pan; cook apple until caramelised.
4.Meanwhile, to make spiced orange dressing, place ingredients in screw-top jar; shake well.
5.Place apple mixture, dressing and spinach in medium bowl; toss gently to combine. Arrange pork among serving plates; top with apple salad. Drizzle with any remaining dressing from bowl.
