1.Heat 2 tablespoons of the stock in a large saucepan, add leek and garlic, cook, stirring, about 10 minutes or until leek is soft.
2.Add remaining stock, potato and the water to the pan, bring to the boil. Reduce heat, simmer, covered, 10 minutes. Add peas, simmer 5 minutes or until vegetables are tender. Cool 10 minutes.
3.Blend or process soup, in batches, until smooth.
4.Return soup to pan, stir over heat until hot. Stir in mint just before serving. Sprinkle with extra mint leaves to serve, if you like.
