Method
1.Trim fat from beef, cut into 1cm pieces.
2.Heat oil in a large pan, cook onion and garlic, stirring, until onion is soft. Add beef, barley, pepper, stock and water, bring to the boil. Simmer, covered, 3 hours, stirring occasionally.
3.Season to taste with salt if needed. Stir in parsley before serving.
