Very berry tiramisu

With a creamy mascarpone filling and bold coffee flavour it is no surprise that tiramisu has become a family favourite. But not everyone love coffee in their desserts (and some don’t like it at all!). Now everyone can enjoy the delicious layered creamy dessert with this very berry tiramisu.

This recipe is a boon for anyone who doesn’t enjoy the taste of coffee. You still get the delightful layers of sponge fingers, mascarpone but with the addition of a strawberry sauce in place of coffee and topped with raspberries. It’s absolutely divine.

Strawberry sauce

Method

1.Beat cream, mascarpone and 1 tablespoon of the sugar in a small bowl with an electric mixer until almost firm peaks form. Beat egg yolks and remaining sugar in another small bowl with electric mixer until thick and creamy. Fold egg yolk mixture into mascarpone mixture. Refrigerate for 1 hour.
2.Meanwhile, make strawberry sauce.Process ingredients until smooth. Strain puree into a small jug; discard seeds.
3.Cut biscuits in half. Pour ¾ cup of strawberry sauce into a small bowl; dip biscuits into sauce. Divide soaked biscuits and any sauce among four 1-cup (250ml) jars or glasses. Layer half the cream mixture, half the remaining strawberry sauce and half the raspberries among glasses. Repeat layering, finishing with strawberry sauce and raspberries.
4.Just before serving, top berry tiramisu with small strawberries.
