This dessert is something else, sweet, crisp and fragrant champagne jelly studded with ripe stone fruit and juicy raspberries. A sophisticated end to a lovely dinner party.
1.Combine 1 cup wine and sugar in a small saucepan; stir over a low heat until sugar is dissolved.
2.Bring to the boil. Reduce heat; simmer, uncovered, 5 minutes; remove from heat.
3.Meanwhile, sprinkle gelatine over water in a heatproof jug or bowl. Stand jug in a medium saucepan of simmering water; stir until gelatine dissolves.
4.Add gelatine mixture and lemon juice to wine mixture; whisk to combine. Stir in remaining wine.
5.Divide fruit evenly among 6 x 1-cup (250ml) capacity serving glasses. Pour wine mixture over fruit.
6.Cover; refrigerate overnight or until firm. Serve.
