1.To make sugar syrup, place caster sugar, water, cinnamon stick and the finely grated lime peel (zest) in a saucepan. Place over high heat and bring to the boil, stirring constantly. Reduce heat to low and simmer for 10 minutes. Let cool and strain.
2.Place wine, syrup, juice and citrus slices in a large jug with lots of ice. Top with soda water, stir and serve immediately in chilled glasses.
