Method

1.Combine 1½ cups lemonade, 1 teaspoon finely grated lemon rind, 1 tablespoon lemon juice and 2 teaspoons finely chopped fresh mint in medium freezer-proof jug, freeze mixture about 1 hour or until partially frozen. Stir, pour into four ⅓ cup (80ml) ice-block moulds. Freeze overnight until firm.
