1.Preheat oven to 200°C (180°C fan-forced). Grease eight holes of 12-hole (⅓-cup/80ml) muffin pan.
2.Sift flour, soda and cayenne into medium bowl. Whisk egg, milk, butter and onion in small bowl. Pour egg mixture into flour mixture; whisk until combined (do not over-mix).
3.Spoon half of the mixture into pan holes; sprinkle with combined cheeses. Top with remaining mixture.
4.Bake muffins about 20 minutes. Stand muffins in pan 5 minutes then turn top-side up onto a wire rack to cool.
