1.Preheat oven to 180°C (160°C fan-forced). Lightly grease and line a 20cm square cake pan with baking paper.
2.Spoon cake mixture into pan, smoothing top. Bake 30-35 minutes, until cooked when tested with a skewer. Cool in pan 5 minutes before turning onto a wire rack to cool completely.
3.To make butter cream; beat butter until white as possible, gradually beat in half the sifted icing sugar then milk, then remaining icing sugar. Beat until smooth.
4.Tint buttercream with green food colouring. Spread all over sides of cake, reserving some for the top.
5.DECORATIONS. In a ziplock bag, combine coconut and food colouring. Shake vigorously until well coated. Transfer to a large tray. Roll sides of cake in coconut. Transfer cake to serving board or plate. Spread reserved buttercream over top of the cake and sprinkle with remaining coconut. Arrange toys for picnic as shown.
