Butter cream

Method

1.Preheat oven to 180°C (160°C fan-forced). Grease two 26cm x 32cm baking dishes (base measurements), line bases with baking paper. Using four packets, prepare cake mix according to directions; divide mixture evenly among prepared dishes. Bake about 35 minutes. Stand cake in dishes 5 minutes; turn onto wire racks to cool.
2.Using paper pattern, cut out half the jersey, turn pattern and cut out other half. Place cakes on board.
3.To make butter cream; beat butter until white as possible, gradually beat in half the sifted icing sugar then milk, then remaining icing sugar. Beat until smooth.
4.Tint butter cream with yellow colouring. Spread top and side of the cake with butter cream.
5.Decorate Jersey with strips of red and green Fruity Metres on sleeves, collar and hem.
6.To make happy birthday and number plaques, make outlines of a 4cm x 16cm rectangle and 5.5mm circle on baking paper. Tint melted chocolate with blue colouring. Spread chocolate within the rectangle and circle outlines; when chocolate is almost set, trim edges; peel off paper.
7.Using decorating gel, pipe on plaques. Carefully lift and position plaques on cake. Press candy letters onto sleeves of jersey, as desired.
