Method

1.Preheat oven to 180°C/160°C fan-forced. Oil 1.5-litre (6-cup) ovenproof dish.
2.Using sharp knife, mandoline or V-slicer, cut potatoes into very thin slices; pat dry with absorbent paper.
3.Finely chop ham. Layer a quarter of the potato into dish; top with a third of the ham. Continue layering remaining potato and ham, finishing with potato.
4.Heat cream and milk in small saucepan until almost boiling; pour over potato mixture. Cover dish with foil; bake in oven 30 minutes. Remove foil; bake a further 20 minutes.
5.Top with cheese; bake, uncovered, about 20 minutes or until potato is tender. Stand 10 minutes before serving.
