1.Preheat oven to 200°C (180°C fan-forced) and line a baking tray with baking paper.
2.To make frangipane, beat butter in a large bowl until smooth. Stir in egg yolks, almonds, sugar and vanilla.
3.Cut the puff pastry into 10cm squares. Place on baking tray and cover with frangipane leaving a 1cm boarder, and brush the edges with egg wash.
4.Slice pear into 0.5cm strips. Place on frangipane and bake for about 12-15 minutes. Serve warm with cream or ice-cream.
