Method

1.Preheat oven to 160°C. Line a large roasting pan with baking paper.
2.Stir almond butter and maple syrup in a small saucepan over low heat just until combined.
3.To make muesli, combine oats, coconut, nuts, pepitas, sunflower seeds, quinoa and amaranth in a large bowl. Pour syrup mixture over dry ingredients, working quickly, stir to coat ingredients in syrup.
4.Spread muesli, in an even layer, in pan. Bake 15 minutes. Remove from oven, stir well. Bake a further 5 minutes or until oats are golden. Cool 10 minutes, stir in chia seeds and cranberries.
5.Meanwhile, peel, halve and core pears, leaving stalks intact. Place in a medium saucepan with juice and the water, bring to the boil. Reduce heat, cover pears with a round of baking paper, simmer 8 minutes or until tender.
6.Serve muesli topped with yoghurt and poached pears.

You will be able to find the ingredients for this muesli either in the health food aisle at most supermarkets or health food stores. The muesli will keep in an airtight container for up to 1 month.
