Muesli muffins

These fruity, wholemeal muesli muffins are packed full of healthy grains and tasty craisins. Mashed banana helps keep them moist for days. They make an excellent lunch-box treat.
Muesli muffins



1.Preheat oven to 200°C (180°C fan-forced). Lightly grease 16 holes of 2 muffin pans and line with muffin cases.
2.Combine eggs, milk, olive oil and banana in a large bowl.
3.Combine flour, bran, muesli, bicarbonate of soda, sugar, cinnamon, craisins and chocolate bits (if using), in a second large bowl.
4.Add banana mixture to flour mixture and stir until mixture has just combined—it’s important not to overwork the flour. Divide among prepared muffin pans. Sprinkle each muffin with a little of the extra muesli.
5.Bake in preheated oven (25-30 minutes) until the muffins have lightly browned and cooked through. Test with a skewer; the skewer should come out clean.
