Method

1.Preheat oven to 180°C (160°C fan-forced). Grease base of a deep 22cm-round cake pan and line base with baking paper
2.Combine egg yolks, matzo, rind, spices, juice, honey and brown sugar in large bowl
3.Beat egg whites in small bowl with electric mixer until soft peaks form. In two batches, fold into matzo mixture.
4.Pour cake mixture into pan and bake about 40 minutes. Stand cake 5 minutes; turn, top-side up, onto wire rack to cool.
5.Serve dusted with sifted icing sugar.

It’s important to use regular honey in the matzo cake, not the easy-to-pour liquefied version
