Grandmother’s chicken

Delicious roast chicken, just like your grandmother used to make it.

1.Heat oil in large flameproof baking dish; cook onion and garlic, stirring, until onion is soft. Add chicken; cook, stirring, until just browned all over. Add rosemary, potato, tomato and stock.
2.Bake, uncovered, in hot oven 1 hour. Stir in mushrooms, bacon and olives. Bake, uncovered, about 20 minutes or until chicken is tender.

Recipe can be made 2 days ahead and refrigerated, covered, or frozen for up to 2 months.
