1.Preheat oven to 120°C/250°F. Using mandolin or V-slicer, finely slice 1 medium pear lengthways. Place slices, in single layer, on wire rack over oven tray. Combine 1 teaspoon caster (superfine) sugar with a pinch ground ginger and a pinch ground cinnamon; sprinkle over pear slices. Bake about 1 hour 20 minutes or until pear slices are dry and crisp.
A firm pear, such as corella, is best for this recipe. The pear slices will become crisper when cool. The crisps are best eaten the day they are made.Note
