Ingredients
Butter cream
Method
1.Preheat oven to 180°C (160°C fan-forced). Grease two 20cm x 30cm lamington pans, line the bases with baking paper. Using three packets, prepare cake mix according to directions; divide between prepared pans. Bake about 40 minutes. Stand cakes in pans 5 minutes; turn onto wire racks to cool.
2.Place cakes side by side. Using paper pattern, cut out lizard. Place cakes on board, joining tail and body pieces with a little of the butter cream.
3.To make butter cream; beat butter until white as possible, gradually beat in half the sifted icing sugar then milk, then remaining icing sugar. Beat until smooth.
4.Tint butter cream with green colouring. Spread lizard all over with butter cream.
5.Sprinkle edge of lizard with brown sprinkles, then sketch in lizard’s markings with a skewer.
6.Sprinkle a row of purple sprinkles around the markings. Use remaining sprinkles to decorate lizard.
Inspired by Aboriginal legend, this striking cake is distinctively an Australian original.
