1.Preheat oven to 180°C (160°C fan-forced); grease and line two 20cm x 30cm lamington pans. Make cakes according to directions on packets, divide mixture evenly between pans; bake in oven about 30 minutes. Stand cakes in pans 5 minutes; turn onto wire racks to cool. Using serrated knife, level cake tops so they are the same height.
2.Turn cakes cut-side down. Using paper pattern from pattern sheet, cut dinosaur’s body, tail and legs from cake, as shown.
3.Assemble cake pieces on prepared board, cut-side down, as shown.
4.To make butter cream; beat butter until white as possible, gradually beat in half the sifted icing sugar then milk, then remaining icing sugar. Beat until smooth.
5.Tint butter cream with green colouring; spread all over cake. Create scales using a palette knife.
6.Using a sharp knife, cut spearmint leaves in half horizontally; position on cake for spine.
7.Position trimmed Tic Tacs for teeth and Life Saver for eye. Cut licorice strap into thin strips, position for eye and mouth. Cut claws from remaining licorice strap. Position claws on feet.
Assemble pieces ready to be iced. Use a palette knife to make scales. Position paper pattern on cake.Note
