1.Preheat oven to slow, 150°C. Lightly grease a 120 24cm loaf pan. Line base and sides with baking paper, extending 2cm above the edge.
2.Sift flour, soda and spices together into a large bowl. Stir in mixed fruit and apricots, and combined banana, juice and eggs.
3.Spoon mixture into prepared pan. Bake for 50-60 minutes. until cooked when tested with a skewer. Cover with a clean tea towel and cool in pan.
4.Serve warm, sliced, with dairy-free spread.
