1.Preheat oven to 200°C (180°C fan-forced).
2.Cut tenderloins in half diagonally.
3.Crush chips coarsely, place in medium shallow bowl. Whisk egg white lightly in small shallow bowl.
4.Dip chicken in egg white then in chips to coat, place, in single layer, on oiled wire rack over oven tray. Bake about 15 minutes or until chicken is cooked through. Serve fingers with sauce.
