Method
1.Preheat oven to 220°C/425°F. Oil and line oven tray.
2.Heat butter in medium pan; add onion, cook covered, over low heat, about 15 minutes, stirring occasionally, until onion is soft. Stir in sugar.
3.Meanwhile, quarter pastry sheets, place on oven tray. Fold in 1cm borders; prick centres, bake pastry about 15 minutes or until browned.
4.Spread onion mixture into pastry cases, top with figs and cheese; bake about 3 minutes or until cheese is softened.
5.Top tarts with prosciutto, drizzle with balsamic glaze; sprinkle with rocket.
Feta or goat’s cheese can be used in place of the blue cheese.
