Caramel Banana Tart



1.Preheat oven to 220°C.
2.Spray an oven tray with cooking oil and place pastry on tray. Fold the edges of the pastry over to make a 1cm border all the way around the edges. Prick the pastry with a fork. Put another oven tray on top of the pastry (this stops the pastry from puffing up while it is in the oven). Bake for 10 minutes.
3.Meanwhile, place butter, sugar and cinnamon in a small saucepan. Stir mixture with a wooden spoon over low heat until smooth. Put the butter mixture and sliced banana in a medium bowl.
4.Use tongs, place the banana mixture on the pastry. Bake about 10 minutes and allow to cool for 20 minutes before serving.
