1.Preheat oven to 180C or 160C fan. Grease a 12-hole, 1/2-cup friand pan. Place on a baking tray.
2.Place pecans in a food processor. Process until fine. Transfer to a bowl. Mash one banana in a bowl and add to ground pecans along with eggwhite, butter, icing sugar, flour, 2 tbsp of maple syrup and cinnamon. Mix well.
3.Spoon banana mixture into pans. Thinly slice remaining banana and arrange on top.
4.Bake for 20 minutes until golden and a skewer inserted into centre comes out clean. Stand in pans for 5 mins before transferring to a wire rack to cool. Drizzle with remaining maple syrup.
