These tasty Asian beef rolls are our take of the Vietnamese bahn mi. Enjoy thinly sliced beef with fresh vegetables, chilli and herbs for a tasty lunchtime treat.

Ingredients

Method

1.In a small bowl, combine peanut butter, sauce and water. Spread over the inside of bread rolls.
2.Sandwich beef, lettuce, carrot, coriander, green onion and chilli between rolls. Add a squeeze of lime juice before serving, if desired.

medium GI You could use left-over roast beef or char-grill a rump steak.
