Easy as pie and just as delicious, apple cobbler will satisfy your sweet tooth. It’s a little like a pie or a crumble but with a soft scone-like dumpling topping. Serve it to your loved ones with a generous dollop of whipped cream or a good quality vanilla ice-cream.

1.Preheat oven to 200°C (180°C fan-forced).
2.Put the apples and sugar in a large saucepan and mix together. Put the pan over a gentle heat and cook for 8-10 minutes or until apples are just beginning to soften but are still holding their shape. Remove from heat and transfer to a large 8 cup (2 litre) capacity baking dish.
3.Place flour, a pinch of salt, sugar, vanilla and butter into a food processor and blend until the mixture resembles breadcrumbs. Add the buttermilk and pulse the mixture until it comes together as a thick batter. Spoon dollops of the batter on top of the apples.
4.Bake for 25 minutes or until the top is golden brown. Dust with sifted icing sugar and serve with custard or cream.

Not suitable to freeze or microwave.
