Summer berry sundae

A truly simple dessert that looks stunning and always feels like a treat, summer berry sundaes can be put together in no time at all.

Summer berry sundae
  • 1/4 cup (55g) caster sugar
  • 500 gram mixed fresh or frozen berries
  • 1 tablespoon orange liqueur or orange juice
  • 1 litre vanilla ice-cream
  • 2/3 cup (100g) macadamias, chopped, toasted

    Combine sugar and berries in a medium pan and stir over low heat, without boiling, until sugar is dissolved.

    Bring to the boil and simmer uncovered about 5 minutes or until berries are soft. Stir in liqueur or juice and cool, if desired.

    To serve, layer scoops of the ice-cream, berry mixture and nuts in 4 tall serving glasses.


Toasting nuts enhances their flavour, texture and aroma. Place the macadamias on an oven tray and bake uncovered at 180°C for 5-8 minutes or until browned lightly.
