Simmered green beans
  • 250 gram green beans, trimmed, halved
  • 1 1/2 cup (375ml) primary dashi
  • 2 tablespoon japanese soy sauce
  • 2 tablespoon sake
  • 2 teaspoon smoked dried bonito flakes

Simmered green beans
  • 1
Bring beans, dashi, sauce and sake to the boil in medium saucepan. Reduce heat; simmer, uncovered, until beans are just tender. Drain over small bowl; reserve liquid.
  • 2
Arrange beans in individual bowls; pour over a little of the reserved liquid. Serve either hot, at room temperature, or chilled, sprinkle with bonito flakes.

Bonito is an oily fish which, when dried and flaked, is widely used in the Japanese kitchen. You could serve the beans with Japanese mustard instead of the bonito and use dry white wine instead of sake.
