Ingredients

Method

1.Preheat oven to 180°C (160°C fan forced). Put 24 paper cases into two 12-hole (2-tablespoons/40ml) deep flat-based patty pans with paper cases.
2.Put the butter, vanilla extract, sugar, eggs, flour and milk into a medium bowl, beat with an electric mixer on low speed until the ingredients are just mixed together. Turn up the speed to medium, beat the mixture for about 3 minutes or until it is smooth and pale in colour.
3.Drop rounded tablespoons of mixture into the paper cases. Put the patty pans into the oven and bake about 20 minutes. Carefully take the pans out of the oven and leave for 5 minutes. Remove cakes from the pans and put them on wire racks, top-side up, leave them to cool down.
4.Meanwhile, make glacé icing of your choice from below.
5.When the cakes are cool, spread the icing over the tops with the back of a spoon or a metal spatula.
6.chocolate Stir 1 teaspoon of sifted cocoa powder into the icing mixture.
7.coffee Stir 1 teaspoon of instant coffee granules into the hot water (make sure the coffee is dissolved), before you add it to the icing mixture.
8.passionfruit Stir 1 tablespoon of passionfruit pulp into the icing mixture.
9.chocolate & orange Stir 1 teaspoon of finely grated orange rind and ½ cup (95g) of dark Choc Bits into the cake mixture, at the end of step 2.
10.passionfruit & lime. Stir 1 teaspoon of finely grated lime rind and ¼ cup (60ml) of passionfruit pulp into the cake mixture, at the end of step 2
11.Banana & white chocolate chip Stir ½ cup of mashed overripe banana and ½ cup (95g) of white Choc Bits into the cake mixture, at the end of step 2

This recipe makes 24 patty cakes. glacé icing Sift the icing sugar into a small heatproof bowl. Stir in the melted butter and enough of the water to make a firm paste (start with a little and add more if you need to). Meanwhile, half-fill a small saucepan with water. Turn the stove on and boil the water. Turn down the heat and let the water simmer. Put the bowl of icing mixture on top of the saucepan; stir the mixture until it is soft enough to spread.
